Spanish Gazpacho: Refreshing Tomato Soup


Ingredients:

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 cups tomato juice
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. In a blender or food processor, combine the chopped tomatoes, cucumber, red bell pepper, red onion, and minced garlic.
  2. Blend until the mixture is smooth.
  3. Pour in the tomato juice, red wine vinegar, and olive oil. Blend again until well combined.
  4. Season the gazpacho with salt and black pepper to taste. Chill in the refrigerator for at least 2 hours before serving.
  5. Garnish with fresh basil leaves if desired.
