South African Bunny Chow: Hearty Bread Bowl Curry


Ingredients:

  • 4 hollowed-out bread rolls (loaves)
  • 1 pound (450g) boneless chicken, beef, or vegetable curry (prepared in your preferred style)
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 1 can (14 ounces) diced tomatoes
  • 2 teaspoons curry powder (adjust to your preferred spice level)
  • Salt and black pepper, to taste
  • Fresh cilantro leaves, for garnish

Instructions:

  1. Hollow out the bread rolls by cutting a circle in the top and scooping out the soft bread from the center, leaving a thick bread shell. Set aside the scooped-out bread for later.
  2. In a large skillet, heat the vegetable oil over medium-high heat.
  3. Add the finely chopped onion and sauté until it becomes translucent.
  4. Stir in the minced garlic and ginger, and cook for another minute until fragrant.
  5. Add the diced tomatoes, curry powder, salt, and black pepper. Simmer for about 10 minutes until the sauce thickens.
  6. Add the boneless chicken, beef, or prepared vegetable curry to the skillet. Simmer until it's heated through.
  7. Ladle the hot curry into the hollowed-out bread rolls, filling them generously.
  8. Garnish with fresh cilantro leaves.
  9. Place the top of the bread roll back on like a lid.
  10. Serve the Bunny Chow immediately, using the scooped-out bread for dipping into the delicious curry.
