South African Bunny Chow: Hearty Bread Bowl Curry
Ingredients:
- 4 hollowed-out bread rolls
(loaves)
- 1 pound (450g) boneless chicken,
beef, or vegetable curry (prepared in your preferred style)
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger,
minced
- 1 can (14 ounces) diced tomatoes
- 2 teaspoons curry powder (adjust
to your preferred spice level)
- Salt and black pepper, to taste
- Fresh cilantro leaves, for
garnish
Instructions:
- Hollow out the bread rolls by
cutting a circle in the top and scooping out the soft bread from the
center, leaving a thick bread shell. Set aside the scooped-out bread for
later.
- In a large skillet, heat the
vegetable oil over medium-high heat.
- Add the finely chopped onion and
sauté until it becomes translucent.
- Stir in the minced garlic and
ginger, and cook for another minute until fragrant.
- Add the diced tomatoes, curry
powder, salt, and black pepper. Simmer for about 10 minutes until the
sauce thickens.
- Add the boneless chicken, beef,
or prepared vegetable curry to the skillet. Simmer until it's heated
through.
- Ladle the hot curry into the
hollowed-out bread rolls, filling them generously.
- Garnish with fresh cilantro
leaves.
- Place the top of the bread roll
back on like a lid.
- Serve the Bunny Chow
immediately, using the scooped-out bread for dipping into the delicious
curry.
