 Lebanese Tabbouleh: Fresh Herb Salad


Ingredients:

  • 1 cup bulgur wheat
  • 1 1/2 cups boiling water
  • 2 cups fresh parsley, finely chopped
  • 1/2 cup fresh mint leaves, finely chopped
  • 1/2 cup green onions, finely chopped
  • 2 ripe tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and black pepper, to taste

Instructions:

  1. Place the bulgur wheat in a heatproof bowl. Pour the boiling water over it, cover, and let it sit for about 30 minutes, or until the bulgur is tender and has absorbed the water. Fluff with a fork and let it cool.
  2. In a large bowl, combine the cooked bulgur, finely chopped parsley, finely chopped mint leaves, finely chopped green onions, diced tomatoes, and diced cucumber.
  3. In a separate small bowl, whisk together the olive oil and lemon juice.
  4. Pour the dressing over the salad and toss to combine. Season with salt and black pepper to taste.
Chill the tabbouleh in the refrigerator for at least 30 minutes before serving. This salad is best served cold.
