Lebanese Tabbouleh: Fresh Herb Salad
Ingredients:
- 1 cup bulgur wheat
- 1 1/2 cups boiling water
- 2 cups fresh parsley, finely chopped
- 1/2 cup fresh mint leaves, finely chopped
- 1/2 cup green onions, finely chopped
- 2 ripe tomatoes, diced
- 1 cucumber, diced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt and black pepper, to taste
Instructions:
- Place the bulgur wheat in a heatproof
bowl. Pour the boiling water over it, cover, and let it sit for about 30
minutes, or until the bulgur is tender and has absorbed the water. Fluff
with a fork and let it cool.
- In a large bowl, combine the cooked
bulgur, finely chopped parsley, finely chopped mint leaves, finely chopped
green onions, diced tomatoes, and diced cucumber.
- In a separate small bowl, whisk together
the olive oil and lemon juice.
- Pour the dressing over the salad and toss
to combine. Season with salt and black pepper to taste.
