Brazilian Feijoada: Hearty Black Bean Stew
Ingredients:
- 1 pound (450g) black beans, dried
- 1 pound (450g) pork shoulder, cubed
- 1/2 pound (225g) smoked sausage, sliced
- 1/2 pound (225g) chorizo sausage, sliced
- 1/2 pound (225g) smoked ham, cubed
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon ground cumin
- Salt and black pepper, to taste
- Rice, for serving
- Orange slices, for garnish
Instructions:
- Rinse the black beans and soak them in
water overnight. Drain before cooking.
- In a large pot, combine the soaked black
beans, cubed pork shoulder, sliced smoked sausage, sliced chorizo sausage,
cubed smoked ham, chopped onion, minced garlic, bay leaves, and ground
cumin.
- Add enough water to cover the ingredients
by about 2 inches.
- Bring the mixture to a boil, then reduce
the heat to a simmer. Cover and cook for about 2-3 hours, or until the
beans are tender and the meat is cooked through. Stir occasionally and add
water if needed to keep the ingredients covered.
- Once the beans and meat are tender,
season the stew with salt and black pepper to taste. Simmer for an
additional 15 minutes.
- Serve the feijoada hot over rice,
garnished with orange slices.
