Brazilian Feijoada: Hearty Black Bean Stew


Ingredients:

  • 1 pound (450g) black beans, dried
  • 1 pound (450g) pork shoulder, cubed
  • 1/2 pound (225g) smoked sausage, sliced
  • 1/2 pound (225g) chorizo sausage, sliced
  • 1/2 pound (225g) smoked ham, cubed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • Salt and black pepper, to taste
  • Rice, for serving
  • Orange slices, for garnish

Instructions:

  1. Rinse the black beans and soak them in water overnight. Drain before cooking.
  2. In a large pot, combine the soaked black beans, cubed pork shoulder, sliced smoked sausage, sliced chorizo sausage, cubed smoked ham, chopped onion, minced garlic, bay leaves, and ground cumin.
  3. Add enough water to cover the ingredients by about 2 inches.
  4. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 2-3 hours, or until the beans are tender and the meat is cooked through. Stir occasionally and add water if needed to keep the ingredients covered.
  5. Once the beans and meat are tender, season the stew with salt and black pepper to taste. Simmer for an additional 15 minutes.
  6. Serve the feijoada hot over rice, garnished with orange slices.
